After the already spicy and sweet flavours of Isla Ometepe, the Syncro series ventured a deep dive into the rugged landscape of Nicaragua. The aim was to capture wilder, richer and more intense flavours. Incidentally, Ometepe is an island in Lake Nicaragua and, at around 270 square kilometres, is the largest volcanic island in the world in a freshwater lake.
